Super Easy Weeknight Crockpot Beef & Veggie Dinner ~ Healthy, Gluten-Free, Delicious!

Broccoli Cassorole

Here’s a dinner you can make if you freeze your garden leftovers (we always do, and we eat really well through the winter!) ~ just add high-quality beef from a local farmer and you’re almost done!

1.5 cups frozen Broccoli

1 cup frozen chopped Peppers

1.5 cups frozen Corn

1 cup frozen shredded Zucchini

1/2 cup Red Onion

1 pound Ground Beef or Sweet Italian Sausage

2 Tablespoons dried Garlic

3 Tablespoons dried Basil

3 Tablespoons fresh/dried Sage

Salt to taste

***If you’d like, you can also add a simple roux after 4 hours:

1/2 cube butter blended with 3-5 TBS GF flour

Add 3/4 Cup milk AND

1 cup shredded Goat Cheddar or 1/2 cup soft Goat Cheese

**Cook on ‘high’ for about 5 hours total, serve. We love this dish over roasted or baked potatoes!
